Softly Scrambled Eggs with Smoked Salmon Brunch Recipe

Gotta love a weekend brunch...croissants, bacon, eggs...all sorts of goodies. We have scrambled eggs every Saturday after our Park Run anyway but every now and again a more luxurious touch is a real treat. That's where this comes in...softly scrambled eggs on a toasted bagel with ribbons of sweet smoked salmon.

Ingredients 

Per person (you can cook more than one portion at a time though!)
3 eggs
1 bagel
50g smoked salmon
10g butter (plus extra for buttering the bagels)
Lemon wedges
Salt and freshly ground black pepper

Method

Slice the salmon into ribbons ready to top the bagels.
Slice the bagel in half and pop in the toaster.
Lightly beat together the eggs with a fork.
Heat the butter in a small frying pan over a medium heat.
Add in the eggs and keep stirring them on a low heat until they are cooked through. Season with salt and pepper.

(In this time the bagel will be toasted. Get it on a plate and butter it).
Once the eggs are cooked through there won't be any liquid left. Cover the bagels with the eggs.
Arrange the salmon over the top and squeeze over some lemon or serve with the wedge.
