
This is one of the speediest dinners I know...and it tastes good too! This is the basic version; you can add chicken, prawns or more vegetables like peppers or peas too. All you need are some key ingredients for an authentic flavour. have everything ready to go - this recipe moves fast!
Serves 2 people
Ingredients
2-3 eggs per person (depends how hungry you are!)
One pack of express wholegrain rice
Chinese 5 spice
Sesame oil
Flavourings - 2 sliced spring onions, 100g ready cooked and sliced chicken breast or prawns, handful of peas
Optional extras- soy sauce, sweet chilli sauce
Method
Heat a drizzle of sesame oil in a non-stick frying pan or wok over a high heat.
Beat the eggs lightly and add them to the pan.
Cook the eggs as if you were cooking an omelette, pulling in the sides until the eggs are nearly cooked.
Begin to smash up the eggs and move them to the side of the pan.
Microwave the rice.
Add in your flavourings to the other side of the pan, and sprinkle with a teaspoon of 5 spice powder.
Add in the rice and mix everything together for a couple of minutes until it is all warmed through.
Serve with plenty of soy sauce and sweet chilli.
