Chicago Style Pizza with Spicy Sausage Filling

Chicago style pizza recipe and method


















We love Pizza,whether it's homemade, take away or in a pizzeria. I saw this Chicago style on TV recently and decided to have a go at my own version. This style of pizza has a lot more sauce, topping and cheese, but the way the pizza is shaped means you can hold all this deliciousness in one place. I make individual portions for the two of us when we are really hungry (usually after a Parkrun on a Saturday) and sausage with chilli is our favourite style. Here's what you need and what to do in order to bake your own Chicago style pizzas at home.


Serves 2

Ingredients


  • 500g very strong white bread flour.
  • 350ml warm water
  • I tablespoon olive oil
  • 10g salt
  • 10g sugar
  • 1 tsp/1 sachet fast action dried yeast
  • 2 x 400g tinned tomatoes, or one large jar tomato passata
  • Olive oil
  • Garlic
  • Herbs - dried oregano, basil leaves
  • Dried chilli flakes or fresh chillies
  • Salt and pepper
  • 500g block mozarella cheese (not balls)
  • Toppings: 4 Italian style sausages and 80g pancetta in this version...what ever you want really!
  • Parmesan cheese
You will also need two 20cm sandwich tins with loose bottoms.

Method

1. Make the pizza base and sauce using the recipe here.

2. When the dough has risen, preheat the oven to 200 degrees Celsius.

3. Grease the bottom and sides of the sandwich tins with oil. Place each on its own baking tray.

4. Roll out one ball on a floured surface with a rolling pin, and use this to line the base and sides of the tin. I leave some dough hanging over the edge as it likes to shrink back sometimes. Repeat with the other tin.

(Save the other two dough balls for another time by putting them in plastic freezer bags or clingfilm and into the deep freeze).

5. Slice the mozarella thinly and arrange a layer over the dough base. You need this to line the base of the dough as a barrier so that the other toppings won't make the dough go soggy.

6. Squeeze the sausages out of their skins and arrange the meat over the cheese. Add any other toppings (I like a fresh sliced red chilli or sprinkle of dried chilli flakes added in here too).

7. Spoon over the tomato sauce, and then gently bring the dough in from over the sides so that it sits high against the edge of the tin. (I added some halved mini plum tomatoes to mine as I had already used some of the sauce in another recipe).

8. Transfer the pizzas to the oven for 40-50 minutes until everything looks and feels cooked through.

9. Remove from the oven. Slide a palette knife around the edges to make sure that the pizza isn't sticking anywhere. Slip the rings off the bases then use a large spatula or fish slice to ease the pizzas from their sandwich tin bases. (Be careful slipping off the sandwich tin rings...long oven gloves or another pair of hands needed!)

10. Garnish with grated parmesan and fresh basil...then tuck in and enjoy!
